Which DEX has most volume, most realistic exchange rates, is fastest and most reliable for BTC <--> DAI exchange and vice versa?

I really can't see the letters KYC combined anymore and left with 0 tolerance for any entity asking me for ID and selfies. its frustrating that even when given options for more freedom like decenterlised exhcanges or decetnerlised USD pegged coins people still choose to be controlled. so this question might be obvious to some but I'm sure it can help others as myself that tries to break free :)
